At Ristorante Golgo, the bond with the Baunei area is reflected in the products and the cuisine. Nestled among the wild olive trees of the Golgo Plateau, the restaurant carries on a gastronomic tradition deeply linked to the local pastoral culture.
Baunei preserves a long history of goat farming, and the Sardinian goat still represents one of the most authentic symbols of this identity today. This memory lives on in the selection of raw materials and the direct relationship with the land.
Part of the meat offered by Ristorante Golgo comes from its own farms, following a supply chain that allows for close monitoring of the animals and products. Kid goat, suckling pig, and Baunei goat are prepared according to tradition, with slow cooking in the restaurant’s large fireplace.
Other products are chosen from small producers known personally, creating a network based on trust, proximity, and knowledge of the origin of the raw materials.
